Every office has a guy who keeps a bag of chips in his desk drawer. This recipe is for him.

The trick is the single layer. Piling chips into a mound guarantees soggy ones in the middle and bare ones on top. Spread them out and every chip gets cheese.

Method

  1. Heat the oven to 425 °F and line a sheet pan with foil.
  2. Spread the chips in a single layer. Overlapping is fine; stacking is not.
  3. Scatter the beans, then the cheese, then the jalapeño.
  4. Bake 6–8 minutes, until the cheese is bubbling and the edges of the chips just start to brown.
  5. Top with salsa and sour cream and eat off the pan. Plates are for meetings.
